Chicken Casserole

Made a yummy recipe tonight for dinner. I had been searching for the perfect recipe to make for an outing to camp this weekend..something simple, something easy and some quick. I found various recipes for chicken & stuffing casserole or some call is dressing and then I saw that some call it Sick Chicken..well that doesn't sound appealing. So after looking over various recipes here is what I came up with.

Recipe
1 whole Pre-Cooked Rotisserie Chicken(straight from the store, got to love that)
1 can of Cream of Celery Soup or you can use Cream of Chicken
1 box of Chicken Broth
1 medium sized diced onion
1 stick of butter
1 loaf of bread
2 tsp poultry seasoning

Directions

Make stuffing:(if you are not up for homemade then use box mix instead, just follow directions on box)
Cube loaf of bread and put in bowl
In sauce pan melt stick on butter, throw in diced onion, cook until translucent and then add in poultry seasoning
Pour contents of sauce pan over bread cubes
Add in small amounts of chicken broth until bread is moist.

Layering Casserole:
Pull chicken off the bone and layer on bottom of 9x13
Mix soup and 8ox chicken broth and then pour over chicken
Layer stuffing on top

Bake in 350' oven for 40 minutes, serve warm.

So it never made it to the outing because it looked so good when I was making it that I decided to have it for dinner that night. The family loved it!

Fluffy Frosting

Need a yummy frosting....I got this recipe from my aunt who is an awesome baker...she served this on cupcakes at our family xmas party. It was so different and unique that I of course asked her for the recipe.

Recipe
1 1/4 cup unsalted butter, softened
1 - 7 1/2 jar of Marshmellow Fluff or Creme
2 cups of confectioners sugar
1 tsp vanilla extract

Directions
Beat butter till light and fluffy, then add in fluff and beat until combined, slowly add in sugar and vanilla until fluffy again. Then spread on your favorite cake or cupcakes. Enjoy!
